Stirred patiently until each grain turns tender, the rice pudding takes on the scent of orange and gingerbread; Rooibos de Noël N°250 from Dammann Frères, a caffeine-free festive rooibos with ginger, clove and a touch of cherry, is steeped right into the milk.

Serves 4 · 45 min

  1. Bring 3 cups (750 ml) of milk just to a simmer, remove from the heat, add 8 g of Rooibos de Noël in a tea filter and steep, covered, for 6 minutes.
  2. Remove the tea, add 1/2 cup (100 g) of short-grain rice and 3 tbsp of sugar, and simmer gently for 35 minutes, stirring often.
  3. Once the rice is tender and creamy, remove from the heat and let cool slightly.
  4. Serve warm or chilled, topped with a spoonful of cherry jam or candied orange peel.
