Still warm and gently puffed from the oven, a vanilla flan waits for its crowning spoonful. Maison Perrotte’s Black Cherry Jam, rich and generously fruity, made from the ripest black cherries, turns each slice into a clafoutis of sorts.

Serves 6 · 45 min

  1. Heat the oven to 350°F (180°C) and butter a 9-inch (23 cm) baking dish.
  2. Whisk 3 eggs with 1/3 cup (65 g) sugar, then add 1/2 cup (65 g) flour, 1 cup (250 ml) milk and 1 tsp vanilla extract.
  3. Pour into the dish and bake for 30 to 35 minutes, until puffed and set in the center.
  4. Serve warm, with a generous spoonful of black cherry jam on each portion.
