A warm loaf pricked all over, tea syrup soaking slowly into the crumb: Dammann Frères’ Goût Russe Douchka Tea N°1, the original Russian-style tea scented with bergamot, sweet orange and lemon, echoes the orange zest in the batter.

Serves 8 · 20 min + 40 min baking

  1. Whisk 1/2 cup (125 g) of plain yogurt with 3/4 cup (150 g) of sugar, 3 eggs, 1/2 cup (120 ml) of neutral oil and the zest of 1 orange.
  2. Fold in 1 3/4 cups (220 g) of flour and 2 tsp of baking powder, pour into a buttered loaf pan and bake at 350°F (180°C) for about 40 minutes, until a toothpick comes out clean.
  3. Meanwhile, brew 2 Goût Russe Douchka tea bags or 4 g of loose tea in 1/2 cup (120 ml) of water at 194°F (90°C) for 4 minutes, remove the bags or strain, then stir in 1/4 cup (50 g) of sugar until dissolved.
  4. Prick the warm cake all over with a skewer and slowly spoon the tea syrup over it.
  5. Let cool before slicing.
