The pop of berries bursting in a simmering pan, then a spoonful beside a soft wedge of Brie: Noël en Laponie N°695 from Dammann Frères, a limited-edition green tea with cinnamon, pink peppercorn, cranberry and bitter orange, spices up the holiday cheese board.

Serves 6 · 25 min

  1. Brew 4 g of Noël en Laponie in 1 cup (250 ml) of water at 176°F (80°C) for 3 minutes, then strain.
  2. In a saucepan, combine the tea with 8 oz (225 g) of fresh or frozen cranberries, 1/2 cup (100 g) of sugar and the zest of 1 orange.
  3. Simmer for 10 to 12 minutes, until the berries burst and the compote thickens.
  4. Let cool and serve with a board of soft cheeses such as Brie or Camembert.
