When rhubarb softens into ribbons and strawberries blush in the pan, the fruity perfume of Dammann Frères’ Jardin Bleu Tea N°3, a black tea with rhubarb, strawberry and wild strawberry, is already there to meet them.

Serves 4 · 25 min

  1. Brew 2 Jardin Bleu tea bags or 4 g of loose tea in 1/2 cup (120 ml) of water at 194°F (90°C) for 5 minutes, then remove the bags or strain.
  2. In a saucepan, simmer the tea with 10.5 oz (300 g) of rhubarb cut into pieces and 1/3 cup (70 g) of sugar for 10 minutes.
  3. Add 7 oz (200 g) of halved strawberries and cook for 3 more minutes.
  4. Let cool and serve over plain yogurt, or with scones and whipped cream.
