Mint crushed with cane sugar and lime at the bottom of the glass, crushed ice, a splash of bubbles: here Dammann Frères’ Miss Dammann Tea N°477, with real pieces of ginger, lime and passion fruit, stands in for rum, spirited without the spirits.

Serves 4 · 10 min + 1 h chilling

  1. Brew 4 tea bags (or 8 g of loose tea) of Miss Dammann in 2 cups (500 ml) of water at 176°F (80°C) for 3 minutes, remove the tea, let cool and refrigerate for 1 hour.
  2. In each of 4 glasses, crush a few mint leaves with 1 tsp of cane sugar and a quarter of a lime cut into pieces.
  3. Fill the glasses with crushed ice and pour in the chilled tea.
  4. Top with a splash of sparkling water, stir and serve with a slice of lime.
