Cooked the way a jam maker would cook it, patiently, rather than the way a factory would. Maison Perrotte’s Ketchup, an artisanal reinvention of a great classic, is slow-simmered from rare Black Crimean tomatoes and Roscoff onions, both grown in France, with Lampong pepper and smoked paprika, and that patient cooking brings each ingredient to the fore. The result is a complex, sweet-savory sauce with a fine balance of acidity and spice. Serve it with a gourmet burger and fries, or alongside grilled sausages.

The Ingredients
Black Crimean tomatoes (France) (40.30%) • Brown sugar • Roscoff onions (France) (24.18%) • Cider vinegar • Mustard (water, mustard seeds, spirit vinegar, salt, acidity regulator: citric acid, preservative: potassium disulfite) • Carrots • Grape seed oil • Smoked paprika • Guérande salt • Lampong pepper • Cloves. Allergens: Contains mustard and sulfites. Made in a workshop that also handles nuts, milk, eggs and gluten.
Serving Ideas
With a gourmet burger, fries or potato wedges. Alongside grilled sausages, a club sandwich or fried chicken. With an omelet, scrambled eggs or a full breakfast. As a base for a homemade barbecue or cocktail sauce. Alongside charcuterie or grilled meats.

Recipe idea

Mini Meatloaves with Ketchup Glaze

Serves 4 · 20 min + 25 min baking

  1. Preheat the oven to 400°F (200°C).
  2. Mix 1 lb (450 g) of ground beef with 1 egg, 1/2 cup (30 g) of fresh breadcrumbs, 1 finely chopped onion, salt and pepper.
  3. Shape into 8 small loaves on a lined baking sheet and brush each one generously with Maison Perrotte ketchup.
  4. Bake for 20 to 25 minutes, until cooked through (160°F/71°C).
  5. Serve with mashed potatoes and extra ketchup on the side.

The Maker
The seasons pass, and each leaves its fruit behind for whoever knows how to keep it. Maison Perrotte is a French artisanal jam house founded by Stéphan Perrotte, a world champion master jam maker. Since 2013, the house has made fruit preserves centered on seasonal ingredients, traditional techniques, and authentic flavor. The fruit is carefully selected and cooked in small batches. From this patient work come gourmet jams, spreads, and fruit creations that honor French craftsmanship and the natural taste of the fruit, at breakfast as well as in desserts.
