Cane sugar • Tea infusion (water, Miss Dammann tea: green tea, ginger pieces, lime essential oil, passion fruit flavoring) • Gelling agent: pectins • Acidifier: citric acid. Prepared with 3.4 g of tea and 31 g of water per 100 g. Total sugar content: 61 g per 100 g. May contain traces of tree nuts and milk.

Serving Ideas

On a buttered brioche, a croissant, toast or refined canapés. With fresh goat’s cheese, ricotta or a Greek yogurt. As a filling for macarons, a lemon tart or a sponge cake. Alongside a duck terrine or grilled prawns.

Ginger-Lime Glazed Shrimp Skewers

Serves 4 · 20 min

Melt 3 tbsp of Miss Dammann tea jelly with the juice of 1/2 lime and 1 tsp soy sauce in a small saucepan.
Thread 1 lb (450 g) peeled large shrimp onto skewers and brush them lightly with oil.
Grill or sear over high heat for 2 to 3 minutes per side, until pink and opaque all the way through.
Brush with the warm glaze during the last minute and serve with lime wedges.
