From branch to mill in under 24 hours. For its PDO Vallée des Baux-de-Provence Olive Oil, Estoublon blends the estate’s five olive varieties, harvested from early November to mid-December and pressed at its own mill within 24 hours of picking. Balanced, intense, and vegetal, it offers touches of freshly cut grass and a slightly fiery finish, with a fine harmony among the varieties. An oil for every day: pour it over asparagus and green beans, or over salads with a pinch of fleur de sel.

The Maker
Olive trees outlive the hands that plant them, and the land keeps their memory. In the heart of Provence, in the Alpilles, Château d’Estoublon watches over an estate established in 1489. Estoublon is renowned for its extra virgin olive oils, its wines, and a refined Provençal art de vivre. Centuries of heritage meet modern expertise in the way the estate tends its olive groves and vineyards, with a steady commitment to quality and sustainability. Its olive oils, among them single-variety bottlings and gourmet creations, are made from carefully selected olives and prized for their elegance, their aromatic richness, and their true French terroir.
