Alfalfa is often mowed before it can flower, to feed livestock. Once common across France, the plant now yields a honey that has become increasingly rare, and Hédène harvests its Alfalfa Honey in the Ardennes Regional Natural Park. It offers an exceptional sweetness, a floral fragrance, and a light, creamy texture, with discreetly fruity overtones that emerge gently on the palate. Spread it on warm toast, or stir it into warm milk.
