It offers delicate aromas of pine nut and resin, carried by a deep, intense woody character that reflects its mountain origins. Drizzle it over a sheep’s milk cheese or a mature Comté, brush it onto duck breast as a glaze, or stir it into warm milk on a winter evening.

Serving Ideas
Drizzled over a sheep’s milk cheese, a blue cheese or a mature Comté. On warm toast, a crêpe or a slice of rye bread. In a glaze for duck breast, lamb or roasted root vegetables. Stirred into a herbal tea or warm milk on winter evenings. With charcuterie, or simply on its own to savor its mountain terroir.

Recipe idea

Pine Honey Roasted Butternut Squash

Serves 4 · 45 min

  1. Preheat the oven to 400°F (200°C).
  2. Cut 1 butternut squash (about 2 lb / 1 kg) into cubes and 2 red onions into wedges.
  3. Toss with 2 tbsp of olive oil, salt and pepper, spread on a baking sheet and roast for 25 minutes.
  4. Drizzle with 2 tbsp of pine honey, toss and roast for 10 more minutes, until caramelized.
  5. Finish with a few thyme leaves and serve with roast meat or on its own.
