Estoublon’s Béruguette Olive Oil is a single-variety extra virgin olive oil, first cold pressed from Béruguette olives of the Vallée des Baux-de-Provence. Vegetal, fiery, and lively, it offers a remarkable flavor of artichoke and green hazelnut, with a slight bitterness and the hot, spicy character so typical of the variety. Pour it over raw artichokes or fennel, or over bruschetta with tomatoes and basil.

Shaved Fennel & Orange Salad

Serves 4 · 15 min

  1. Shave 2 fennel bulbs as thinly as possible.
  2. Add the segments of 2 oranges and a handful of black olives.
  3. Dress with Béruguette olive oil, a squeeze of lemon, salt and pepper.
  4. Let rest for 5 minutes and top with the fennel fronds.
