Vibrant and green-fruity, it ends on a clean finish of green apple and fresh almond: a lively, expressive oil. Taste it on its own, on fresh country bread, before pouring it over tomatoes or a salade niçoise.

Tasted on its own, on fresh country bread. In a vinaigrette for crudités, tomatoes or a salade niçoise. Drizzled over a sea bream tartare or grilled fish, or in a marinade. Over a chilled soup or a fresh goat’s cheese.

Recipe idea

Summer Gazpacho

Serves 4 · 15 min + 2 h chilling

  1. Blend 2 lb (1 kg) of ripe tomatoes with half a cucumber, half a red bell pepper, a small garlic clove, 1 tbsp of sherry vinegar and salt.
  2. With the blender running, pour in 1/3 cup (80 ml) of Paradis olive oil.
  3. Chill for at least 2 hours.
  4. Serve very cold, with a drizzle of oil and diced cucumber on top.

The Maker
Some olive trees have watched the centuries go by, and one family has watched over them for five generations. Since 1902, the Pinatel family has tended these centuries-old trees at Domaine Salvator, a family-owned producer of organic olive oils in the heart of Provence. Every oil comes from olives grown in the family’s own groves and is made using traditional methods.
