A new silhouette for a familiar icon. An emblem of Estoublon for nearly 20 years, the bottle of Couture Olive Oil has been redesigned in a bolder, more sculptural form; inside is a Grand Cru blend that Victor Joyeux, the estate’s oenologist, composed from a meticulous selection of plots. The nose is frank and lively, with vegetal notes and a bright fruitiness recalling crisp arugula and freshly cut Mediterranean herbs; the palate, precise and balanced, shows the slight bitterness of raw artichoke and tomato leaf before a smooth, silky finish of green almond. Taste it on its own, on warm country bread with a pinch of fleur de sel.

Provençal Pistou

Serves 4 · 10 min

  1. Pound 2 garlic cloves with a pinch of coarse salt in a mortar.
  2. Add 2 packed cups (50 g) of basil leaves and crush them into a paste.
  3. Gradually work in 1/2 cup (120 ml) of Couture olive oil.
  4. Stir into a vegetable soup or pasta, or spoon over grilled vegetables.
