Dark as the shade beneath the firs of Gérardmer. Hédène gathers its Fir Honey in this forest of the Vosges mountains, in Lorraine, one of France’s most beautiful fir forests, and because production is irregular and unpredictable, each harvest is a precious find. Rare and lightly syrupy, noble and complex, it reveals woody overtones, ripe fruit, maple syrup, and delicate notes of resin, with a sweet, long-lasting finish. Serve it with a Munster, or stir it into tea on a winter evening.
