A bowl, a whisk, and a fine foam of vivid green. Matcha Tradition, from Dammann Frères, is harvested, produced, and packed in Japan, in pre-measured sticks for simple use and optimal freshness. Vegetal and vivid in color, it lends itself to the bowl as well as the kitchen. To drink, pour one stick into a bowl, add 70ml of hot water at 80°C, and whisk vigorously until a fine foam appears; in cooking, use one stick as the recipe requires, in financiers, madeleines, or a cheesecake.

Whisked with hot water for a traditional bowl, with a wagashi or mochi. As a matcha latte, with warm milk or a plant-based milk. In baking: financiers, madeleines, cheesecake or ice cream. Sprinkled at the last moment over a white chocolate dessert or a yuzu panna cotta.

Recipe idea

Matcha Brown Butter Financiers

Makes 12 · 15 min + 15 min baking

  1. Melt 7 tbsp (100 g) of butter over medium heat until golden and nutty, then let it cool slightly.
  2. In a bowl, mix 3/4 cup (100 g) of powdered sugar, 1/2 cup (50 g) of almond flour, 1/4 cup (30 g) of flour and 2 sticks (3 g) of Matcha Tradition.
  3. Stir in 3 egg whites, then the browned butter, until smooth.
  4. Fill 12 buttered financier or mini-muffin molds and bake at 400°F (200°C) for 12 to 14 minutes, until golden at the edges.
