Recipe idea

Strawberry Herbal Tea Jellies

Makes 6 · 15 min + 4 h chilling

Steep 4 tea bags (or 8 g of loose tea) of Merveilles N°480 in 2 cups (500 ml) of water at 203°F (95°C) for 6 minutes, then remove the tea.
Sprinkle 1 envelope (1/4 oz / 7 g) of powdered gelatin over 3 tbsp of cold water and let it soften for 5 minutes.
Stir the gelatin and 1/4 cup (50 g) of sugar into the hot infusion until fully dissolved.
Divide diced strawberries among 6 small glasses, pour the infusion over them and refrigerate for 4 hours, until set.
