Cream left overnight with tea in the fridge whips up subtly perfumed, then meets lychees, peach and pink grapefruit under crushed meringue: Dammann Frères’ Bali Tea N°315, green and jasmine teas with a touch of rose, brings an air of the tropics.
Serves 4 · 20 min + overnight infusing
- Pour 1 cup (250 ml) of cold heavy cream into a jar with 2 tea bags (or 4 g of loose tea) of Bali Tea, cover and refrigerate overnight.
- Strain the cream, pressing the tea well, then whip it with 2 tbsp of powdered sugar to soft peaks.
- Gently fold in diced lychees, peach slices and pink grapefruit segments.
- Spoon into glasses and top with crushed meringues just before serving.
