Serves 4 · 15 min + 3 h freezing

  1. Steep 8 g of Carcadet Cassis Menthe in 2 1/2 cups (600 ml) of water at 203°F (95°C) for 6 minutes, then strain.
  2. Stir in 1/3 cup (70 g) of sugar and the juice of 1/2 lemon, then let cool.
  3. Pour into a shallow dish and freeze for 3 hours, scraping with a fork every 45 minutes to form fine crystals.
  4. Serve in chilled glasses with fresh blueberries and a mint leaf.
