Every half hour a fork scrapes the freezing tea into finer crystals, until the granita sparkles in chilled glasses with a slice of lemon: Dammann Frères’ Ceylan O.P. Tea N°7, woody and gently spicy, keeps its soft, round character even ice-cold.

Serves 4 · 10 min + 3 h freezing

  1. Brew 3 Ceylan O.P. tea bags or 6 g of loose tea in 2 cups (500 ml) of water at 194°F (90°C) for 5 minutes, then remove the bags or strain.
  2. Stir in 1/3 cup (70 g) of sugar and the juice of 1 lemon, then let cool.
  3. Pour into a shallow dish and freeze for 3 hours, scraping with a fork every 30 minutes to form fine crystals.
  4. Serve in chilled glasses with a thin slice of lemon.
