- Coarsely crush 1 tbsp of the five pepper blend in a mortar.
- Press it onto the flesh side of 4 salmon fillets (about 6 oz/170 g each) and season with salt.
- Sear, pepper side down, in 1 tbsp oil for 3 minutes, then turn and cook 3 to 4 minutes more, until the salmon flakes easily.
- Serve with lemon wedges and a green salad.
