After slow hours in foil, the ribs meet a hot oven and turn sticky and lacquered: Place des Épices’ organic American barbecue blend, built on paprika, garlic, onion and dark cane sugar, brings smoke and sweetness without the burn.

Serves 4 · 2 h 45 min

  1. Rub 3 lb (1.4 kg) pork spare ribs all over with 3 tbsp of the American barbecue blend, 1 tsp salt and 1 tbsp oil.
  2. Wrap them tightly in foil and bake at 300°F (150°C) for 2 hours 15 minutes, until tender.
  3. Unwrap and brush with 1/2 cup (120 ml) barbecue sauce mixed with 1 tsp of the blend.
  4. Return to a 425°F (220°C) oven for 15 minutes, until sticky and caramelized, then cut into portions.
