Tea brewed, then reduced with honey into a syrup, glazes roasted figs piled on goat cheese toasts: Dammann Frères’ 7 Parfums Tea N°17, layered with bergamot, apricot, fresh fig and lotus flower, shows its complexity in the kitchen.

Serves 4 · 25 min

  1. Brew 4 g of 7 Parfums tea in 1/2 cup (120 ml) of water at 194°F (90°C) for 5 minutes, then strain.
  2. Simmer the tea with 2 tbsp of honey for about 5 minutes, until syrupy.
  3. Halve 6 fresh figs, place them cut side up in a baking dish, drizzle with half the syrup and roast at 400°F (200°C) for 10 minutes.
  4. Spread 5 oz (150 g) of fresh goat cheese on 8 toasted baguette slices.
  5. Top with the warm figs, drizzle with the remaining syrup and add a few thyme leaves.
