Figs split open in the heat of the oven, their goat cheese hearts gone soft and warm. Hédène’s Thyme Honey, deeply perfumed with musky notes, pools around them in a rich, lingering sweetness.

Serves 4 · 20 min

  1. Preheat the oven to 400°F (200°C).
  2. Cut a deep cross in the top of 8 fresh figs and press a small piece of fresh goat’s cheese into each one (about 3 oz / 80 g in all).
  3. Place the figs in a baking dish, spoon 2 tbsp of thyme honey over them and bake for 10 to 12 minutes.
  4. Serve warm with a crack of black pepper, as a starter or with a green salad.
