  1. Heat 3 cups (720 ml) of whole milk to 194°F (90°C), steep 3 Oolong Caramel tea bags in it for 5 minutes, then squeeze and remove them.
  2. Add 1/3 cup (70 g) of short-grain rice and 3 tbsp of sugar and bring to a gentle simmer.
  3. Cook over low heat for 35 to 40 minutes, stirring often, until the rice is tender and creamy.
  4. Serve warm or chilled, with a pinch of flaky sea salt on top.
