Its gray comes from the earth itself: in the historic salt marshes of Batz-sur-Mer, in Brittany, this unrefined sea salt from Binet 1660 crystallizes directly on the clay floor of the salt pans, harvested according to centuries-old techniques. The Coarse Gray Salt keeps large crystals with a mineral, gently earthy flavor. Toss a handful into the cooking water for pasta or shellfish, or pack it around a whole sea bass before roasting.

Best on: Cooking water, roasting, seasoning

In the cooking water for pasta, vegetables or shellfish. As a crust for a sea bass, a rib of beef or a whole chicken. In a pot-au-feu, a stew or a court-bouillon. Ground in a mill for everyday seasoning.

Recipe idea

Rosemary Herb Salt

Makes 1 small jar · 10 min + 24 h drying

  1. Strip the leaves from 3 sprigs of rosemary and 3 sprigs of thyme, and finely grate the zest of 1 lemon.
  2. Pulse 1/3 cup (70 g) of the coarse gray salt with the herbs and zest in a food processor until coarsely ground.
  3. Spread the mixture on a plate and let it dry at room temperature for 24 hours, stirring once or twice.
  4. Store it in an airtight jar and rub it over roast pork, chicken or potatoes before cooking.
