It tastes the way an orchard feels in autumn. Part of the Délice de Vinaigre range from Estoublon, the Provençal estate, this mild, light Apple Vinegar brings together the freshness of the fruit, the acidity of cider vinegar, and the natural sugar of apples, gentle and balanced. Store it in a cool, dark place, and use it to deglaze pork chops or black pudding, or in a vinaigrette for a green salad with apples and walnuts.

Serving Ideas
In a vinaigrette for a green salad with apples and walnuts. To deglaze pork chops, black pudding or chicken. Over roasted vegetables, a cabbage slaw or a lentil salad. A few drops in a sauce for pan-fried scallops.

Recipe idea

Pork Chops with Apple Vinegar Pan Sauce

Serves 2 · 25 min

  1. Season 2 bone-in pork chops and brown them in a little butter over medium-high heat, 4 to 5 minutes per side, until they reach 145°F (63°C) inside.
  2. Transfer them to a plate to rest and add 1 sliced shallot and 1 apple cut into wedges to the pan.
  3. Deglaze with 3 tbsp of the apple vinegar, scraping up the browned bits, then add 1/3 cup (80 ml) chicken stock.
  4. Simmer for 2 minutes, swirl in 1 tbsp butter and spoon the sauce and apples over the chops.
