Cherry and apple trees in bloom, dandelion, hawthorn, and willow: the first blossoms of spring in the Creuse, gathered into a single honey. Hédène harvests its Organic Spring Honey there from early April to late May, a certified organic polyfloral honey that also draws on clover and rapeseed. Light yellow to white, with a smooth, creamy texture that melts on the tongue, it offers delicate floral and slightly fruity notes with a hint of lemon. Cold-extracted and unpasteurized, it is lovely stirred into tea or spooned over homemade granola.

Stirred into a cup of tea or a herbal infusion. On fresh bread, with yogurt or a bowl of cereal. In a smoothie or a homemade granola. In a vinaigrette, a poultry marinade or with an aged cheese.

Recipe idea

Spring Honey Granola

Serves 8 · 35 min

Preheat the oven to 325°F (160°C).
Mix 3 cups (270 g) of rolled oats with 1 cup (120 g) of chopped almonds or hazelnuts and a pinch of salt.
Warm 1/3 cup (110 g) of Organic Spring Honey with 3 tbsp of neutral oil until fluid, pour over the oats and stir to coat.
Spread on a lined baking sheet and bake for 20 to 25 minutes, stirring halfway, until golden.
Let cool completely, then store in a jar and serve with yogurt and fresh fruit.
