Xavier Burban grows it using sustainable methods in La Baule-Escoublac, in Loire-Atlantique, and Maison Perrotte turns it into this Dream Strawberry Jam, pure and generous, a dream in a jar that the chef wished to share. Spoon it over fromage blanc or a panna cotta, or spread it on a buttered croissant.

The Ingredients
Dream strawberries (62%) • Sugar • Lemon juice • Fruit pectin.
Made in a workshop that also handles nuts, milk, eggs and gluten.
Serving Ideas

Recipe idea
Vanilla Panna Cotta with Dream Strawberry Jam
- Soften 2 tsp powdered gelatin in 3 tbsp cold water.
- Heat 2 cups (480 ml) heavy cream with 1/4 cup (50 g) sugar and 1 tsp vanilla extract until just simmering, then stir in the gelatin off the heat until dissolved.
- Pour into 4 glasses and chill for at least 4 hours, until set.
- Top each panna cotta with 2 tbsp of the Dream strawberry jam just before serving.
The Maker

Since 2013, the house has made fruit preserves centered on seasonal ingredients, traditional techniques, and authentic flavor. The fruit is carefully selected and cooked in small batches. From this patient work come gourmet jams, spreads, and fruit creations that honor French craftsmanship and the natural taste of the fruit, at breakfast as well as in desserts.
