They sometimes call it the acacia of the mountains: the mountain rhododendron of the Pyrenees. Hédène harvests its Rhododendron Honey from it in the Pyrénées Ariégeoises Regional Natural Park. Light in color and creamy in texture, it offers a sweet, fruity fragrance, a delicate note of rose, and a subtle lemony finish: a mild, refined honey. Pair it with a Tomme des Pyrénées, or drizzle it over fromage blanc or a fruit salad.

Fromage Blanc with Raspberries and Rhododendron Honey

Serves 2 · 5 min

Divide 1 cup (250 g) of fromage blanc or Greek yogurt between two bowls.
Top with a handful of raspberries and a little grated lemon zest.
Spoon 1 tbsp of rhododendron honey over each bowl; its rose and lemon notes suit the berries.
Finish with toasted sliced almonds and serve for breakfast or dessert.
