Serves 4 · 10 min + 1 h chilling

  1. Brew 3 tea bags or 6 g of loose Grand Goût Russe tea in 1 1/2 cups (360 ml) of water at 194°F (90°C) for 4 minutes, then remove the bags or strain.
  2. Stir in 3 tbsp of honey and refrigerate for 1 hour.
  3. Divide among 4 glasses filled with ice and top each with 1/2 cup (120 ml) of chilled sparkling water.
  4. Garnish with a thin slice of lime and a sprig of mint.
