Pears poach slowly in a golden bath of chamomile, honey and lemon zest, until the liquid reduces to a light syrup: Dammann Frères’ Chamomile N°422, a pure herbal tea with honeyed notes and a hint of pineapple, brings its gentle calm to dessert.

Serves 4 · 35 min

  1. Steep 4 tea bags (or 8 g of loose flowers) of Chamomile N°422 in 4 cups (1 liter) of water at 203°F (95°C) for 6 minutes, then strain into a saucepan.
  2. Add 1/3 cup (100 g) of honey and a strip of lemon zest and bring to a simmer.
  3. Add 4 peeled pears and poach them gently for 20 to 25 minutes, until tender.
  4. Lift out the pears, reduce the liquid to a light syrup and spoon it over the pears to serve.
