Gathered between May and July, these flowers keep a little of the summer light in their golden cup. Chamomile N°422 from Dammann Frères, one of France’s oldest tea houses, founded in 1692, is a pure, single-ingredient herbal tea made from a perennial plant cultivated mainly in Eastern Europe. Its bright golden infusion is naturally sweet, fruity, and lightly honeyed, with delicate notes of pineapple. Free of caffeine, it is available in a 100g canister or in 24 individually enveloped tea bags. At bedtime, with a spoonful of honey, it opens the door to sleep.

A calming cup at bedtime, with a spoonful of honey. With plain biscuits, a pear tart or apple compote. After a rich meal, as a gentle digestif. Delicious with a slice of lemon or a few mint leaves.

Recipe idea

Chamomile Honey Poached Pears

Serves 4 · 35 min

Steep 4 tea bags (or 8 g of loose flowers) of Chamomile N°422 in 4 cups (1 liter) of water at 203°F (95°C) for 6 minutes, then strain into a saucepan.
Add 1/3 cup (100 g) of honey and a strip of lemon zest and bring to a simmer.
Add 4 peeled pears and poach them gently for 20 to 25 minutes, until tender.
Lift out the pears, reduce the liquid to a light syrup and spoon it over the pears to serve.
