Import restrictions and an unpredictable supply make every bean of Cuban Trinitario harder to come by. In Roanne, François Pralus turns this cacao, which ranks among the rarest in the world and has become an increasingly exceptional find, into his Cuba 75% Dark Chocolate Bar. Bold and complex, the chocolate reveals a powerful, spicy aroma, a lightly peppery character, and a long, lingering finish. Savor a square after dinner with an espresso or an aged rum.
