The estuary gives the salt; the smoke gives it a second nature. The Smoked Maldon Fleur de Sel from Place des Épices is a sea salt from Maldon, in Essex, drawn from the highly saline waters of the Blackwater estuary, the result of a permanent tide combined with low rainfall, then smoked. It is one of the rare salts to form pyramid-shaped crystals, and its low magnesium content keeps bitterness to a minimum beneath the smoky notes. Crumble it over a grilled steak or lamb, or over a caramel dessert.

Smoky Salted Chocolate Chip Cookies

Makes 16 · 30 min

Cream 1/2 cup (115 g) softened butter with 1/2 cup (100 g) brown sugar and 1/4 cup (50 g) granulated sugar, then beat in 1 egg.
Stir in 1 1/4 cups (160 g) flour, 1/2 tsp baking soda and 5 oz (150 g) chopped dark chocolate.
Scoop 16 balls onto lined baking sheets and bake at 350°F (180°C) for 10 to 12 minutes, until golden at the edges.
As soon as they come out of the oven, crumble a few smoked Maldon crystals over each cookie.
