Soba Salad with Lemon-Ginger Tea Dressing

Serves 4 · 20 min

Brew 2 tea bags of Organic Lemon Ginger in 1/2 cup (125 ml) of water at 176°F (80°C) for 3 minutes, then remove them and let cool.
Whisk 1/4 cup (60 ml) of the tea with 2 tbsp of soy sauce, 1 tbsp of rice vinegar, 1 tbsp of honey and 1 tbsp of toasted sesame oil.
Cook 7 oz (200 g) of soba noodles according to the package, rinse under cold water and drain.
Toss the noodles with shredded cucumber, carrot and shelled edamame, add the dressing and sprinkle with sesame seeds.
