This is how La Compagnie de Bouteville ages its Balsamic Vinegar 10 Years, Le Baume de Bouteville, an artisanal French balsamic inspired by the traditional Modena recipe and made from freshly harvested Ugni Blanc grapes. The long aging develops deep, complex aromas of smoked caramel, prunes, and leather. A refined condiment to use a few drops at a time: over parmesan shavings or foie gras, or by the spoonful as a digestif, as connoisseurs do.

Aged Parmesan and Strawberries with 10-Year Balsamic
- Break 5 oz (150 g) aged parmesan into bite-size chunks with the tip of a knife.
- Halve 12 ripe strawberries and arrange them on a board with the parmesan.
