Three years of waiting have rounded its edges. Laurent Agnès makes this artisanal Red Wine Vinegar from 100% Merlot grapes from Bordeaux, then ages it for three years, until its flavor settles into a beautifully balanced depth: rich, rounded notes and a smooth tartness underpinned by an acidity of 7%. A refined and versatile condiment, it belongs in a classic vinaigrette for lentils or leeks, or in a shallot sauce for red meats.

Serving Ideas
In a classic vinaigrette for green salads, lentils or leeks. To deglaze a steak, calf’s liver or duck breast. In a marinade for beef, game or a coq au vin. In a béarnaise or a shallot sauce for red meats.

Recipe idea

Chicken with Red Wine Vinegar

Serves 4 · 55 min

  1. Season 8 bone-in chicken pieces and brown them in 2 tbsp butter in a large skillet over medium-high heat, about 10 minutes.
  2. Add 4 chopped shallots and 2 crushed garlic cloves, cook for 2 minutes, then pour in 1/2 cup (120 ml) of the red wine vinegar and let it bubble for 2 minutes.
  3. Add 1 tbsp tomato paste and 1/2 cup (120 ml) chicken stock, cover and simmer for 30 minutes, until the chicken reaches 165°F (74°C) inside.
  4. Remove the chicken, stir 1/4 cup (60 ml) heavy cream into the sauce and simmer until slightly thickened, then spoon it over the chicken.
