Somewhere between a fresh walnut and a glass of green walnut wine. Inspired by Provence, Estoublon’s Walnut Vinegar is a wine vinegar of strong character, marked by the authentic aroma of fresh walnuts, with an aromatic richness and beautiful depth on the palate. Balanced and enveloping, it offers a long finish with woody, slightly tannic notes. Dress a salad of endive, walnuts, and blue cheese with it, or use it to deglaze a duck breast.

Serving Ideas
In a vinaigrette for endive, walnuts and blue cheese. Over a lamb’s lettuce salad with goat’s cheese or pears. To deglaze duck breast, pork or poultry livers. With a lentil salad or roasted beetroot.

Endive, Pear and Blue Cheese Salad

Serves 4 · 15 min

  1. Separate the leaves of 4 Belgian endives and slice 1 ripe pear into thin wedges.
  2. Whisk 1 1/2 tbsp of the walnut vinegar with 4 tbsp walnut oil or olive oil, salt and pepper.
  3. Toss the endive and pear with the vinaigrette.
  4. Top with 3 1/2 oz (100 g) crumbled blue cheese and a handful of toasted walnuts, and serve right away.
