Lightning, in French, is foudre, and half a teaspoon in a lime and honey marinade proves the name: Sauce Martin’s Foudre hot sauce, made from pure red habanero, gives the pork fierce heat and lively fruity, floral aromas.

Serves 4 · 40 min + 1 h marinating

  1. Whisk 3 tbsp of olive oil with the juice of 1 lime, 1 tbsp of honey, 1 grated garlic clove, a pinch of salt and 1/2 tsp of Foudre hot sauce.
  2. Coat 1 1/2 lb (700 g) of pork tenderloin in the marinade and refrigerate for 1 hour.
  3. Sear on all sides in a hot ovenproof skillet, then roast at 400°F (200°C) for 15 to 20 minutes, until it reaches 145°F (63°C) inside.
  4. Let rest for 5 minutes, slice and serve with rice and a pineapple or mango salad.
