A glossy red crust caramelizing on little meatloaves as the kitchen fills with a warm, smoky sweetness: Maison Perrotte’s Ketchup, slow-simmered from Black Crimean tomatoes and Roscoff onions, brings a jam maker’s patience to a family supper.

Serves 4 · 20 min + 25 min baking

  1. Preheat the oven to 400°F (200°C).
  2. Mix 1 lb (450 g) of ground beef with 1 egg, 1/2 cup (30 g) of fresh breadcrumbs, 1 finely chopped onion, salt and pepper.
  3. Shape into 8 small loaves on a lined baking sheet and brush each one generously with Maison Perrotte ketchup.
  4. Bake for 20 to 25 minutes, until cooked through (160°F/71°C).
  5. Serve with mashed potatoes and extra ketchup on the side.
