Diced strawberries suspended in a trembling jelly, served in small glasses after dinner: Dammann Frères’ Merveilles Herbal Tea N°480, caffeine-free verbena and lime blossom scented with strawberry, raspberry and rose, sets into a light, floral dessert.

Makes 6 · 15 min + 4 h chilling

  1. Steep 4 tea bags (or 8 g of loose tea) of Merveilles N°480 in 2 cups (500 ml) of water at 203°F (95°C) for 6 minutes, then remove the tea.
  2. Sprinkle 1 envelope (1/4 oz / 7 g) of powdered gelatin over 3 tbsp of cold water and let it soften for 5 minutes.
  3. Stir the gelatin and 1/4 cup (50 g) of sugar into the hot infusion until fully dissolved.
  4. Divide diced strawberries among 6 small glasses, pour the infusion over them and refrigerate for 4 hours, until set.
