Flaky spirals, sharp cheddar and a whisper of thyme, still warm as the guests arrive: Maison Perrotte’s Tarte Tatin jam, with its caramelized apple and salted butter caramel, plays sweet against savory in every bite.

Makes 20 · 25 min + 20 min baking

  1. Unroll 1 sheet of puff pastry and spread it evenly with 4 tbsp of the Tarte Tatin jam, leaving a small border.
  2. Sprinkle with 3 oz (85 g) grated mature cheddar and a little fresh thyme.
  3. Roll up tightly from one long side, chill for 10 minutes, then cut into 20 slices.
  4. Arrange on a lined baking sheet and bake at 400°F (200°C) for 15 to 20 minutes, until puffed and golden.
  5. Serve warm as an appetizer.
