Maison Perrotte’s Tarte Tatin Jam captures the soul of France’s beloved upside-down tart: an exclusive creation by Stéphan Perrotte for Fou de Pâtisserie, from the Confiture Pâtissière range. Caramelized apple and salted butter caramel form a perfectly balanced duo, the fruit enriched by the buttery depth of the caramel. Spoon it over crème fraîche, or serve it with a Camembert or a mature cheddar.

Serving Ideas
On a buttered crêpe, a croissant, brioche, toast or crumpets. Spooned over vanilla ice cream or a crème fraîche. As a filling for tartlets, a sponge roll or shortbread. With a Camembert, a Brie or a mature cheddar.

Recipe idea

Tatin and Cheddar Puff Pastry Pinwheels

Makes 20 · 25 min + 20 min baking

  1. Unroll 1 sheet of puff pastry and spread it evenly with 4 tbsp of the Tarte Tatin jam, leaving a small border.
  2. Sprinkle with 3 oz (85 g) grated mature cheddar and a little fresh thyme.
  3. Roll up tightly from one long side, chill for 10 minutes, then cut into 20 slices.
  4. Arrange on a lined baking sheet and bake at 400°F (200°C) for 15 to 20 minutes, until puffed and golden.
  5. Serve warm as an appetizer.
