Poured from high above the glass until a light foam appears, this tea is as much a gesture as a drink; Dammann Frères’ Flavored Green Mint Tea N°667, Gunpowder green tea with spearmint and peppermint, keeps the Moroccan tradition fresh and vegetal.

Serves 4 · 10 min

  1. Place 6 g of Flavored Green Mint Tea N°667 (or 3 tea bags) in a teapot, add a splash of hot water, swirl and discard it to rinse the leaves.
  2. Add a large handful of fresh mint sprigs and 3 to 4 tbsp of sugar, then fill with 3 cups (750 ml) of water at 176°F (80°C).
  3. Let steep for 3 minutes, then pour a glass and return it to the teapot two or three times to blend.
  4. Serve from high above small glasses to create a light foam, with honey pastries or dates.
