Balanced and intense, the olive oil offers vegetal notes of freshly cut grass, a slightly fiery finish, and persistent aromas; the balsamic vinegar strikes a perfect balance of sweet-and-sour flavors, with a long finish of fruity and woody aromas. Mist both over a green salad for a light, even seasoning.

Oil and vinegar misted over a green salad for a light, even seasoning. Over grilled vegetables, white meats, fish fillets or a beef carpaccio. A fine mist of vinegar to finish a tomato and mozzarella or goat cheese salad. The oil sprayed on country bread before toasting. The vinegar with oysters, shellfish or gazpacho, or in a red meat marinade.

Misted Tomato & Burrata Salad

Serves 2 · 10 min

Slice 3 ripe heirloom tomatoes and arrange them on a plate with a burrata in the center.
Mist the olive oil lightly over everything, then season with flaky salt and cracked pepper.
Scatter a few torn basil leaves on top.
Finish with two or three sprays of balsamic vinegar just before serving.
