Lemony and cocoa-like notes, wrapped in a gentle, resinous warmth. Selim Peppercorns from Place des Épices come from a tropical berry that grows wild across West Africa, from Cameroon to Senegal and Niger, and has long been used in place of pepper. That surprising fragrance makes it a remarkable find for adventurous cooks. Crush it over grilled fish or prawns, or add it to a stew or a marinade, as in West African cuisine.
