In France, a passionate artisan jam maker prepares Maison Perrotte’s Apricot Jam with nothing but sugar, lemon juice, and fruit pectin added to the fruit. Velvety in texture, it has a generous, sun-warmed flavor that carries all the roundness of ripe fruit. Brush it over a fruit tart or a Sacher torte for a lovely glaze, or spread it on a buttered croissant.

Fresh Fruit Tart with Apricot Glaze

Serves 6 · 25 min

  1. Whip 1 cup (225 g) mascarpone with 1/2 cup (120 ml) cold heavy cream and 2 tbsp sugar until thick.
  2. Spread it into a 9-inch (23 cm) prebaked tart shell.
  3. Arrange sliced strawberries, kiwis and fresh apricots or peaches on top.
  4. Warm 3 tbsp of the apricot jam with 1 tbsp water and brush it over the fruit to make it shine.
  5. Refrigerate until serving.
