The Tropical Chocolate Squares from François Pralus gather the ten origins of the Tropical Pyramid in 5g squares of 75% dark chocolate, made bean to bar in Roanne and presented in a sleeve of 20 or a large sleeve of 40. Wrapped in the color of its producing country, every square is a delightful way to discover the subtleties of cocoa from one origin to the next. Cocoa (75% minimum) • Sugar • Cocoa butter • Emulsifier: sunflower lecithin. Allergens: Made in a workshop that uses tree nuts and milk.

Molten-Center Chocolate Square Cookies

Makes 12 · 20 min + 12 min baking

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Cream 1/2 cup (115 g) soft butter with 2/3 cup (130 g) brown sugar, then beat in 1 egg and 1 tsp vanilla extract.
Stir in 1 1/2 cups (190 g) flour, 1/2 tsp baking soda and a pinch of salt.
Wrap 12 balls of dough around 12 unwrapped Tropical Chocolate Squares, sealing them well, and space them on the sheet.
Bake for 10 to 12 minutes, until golden at the edges, and enjoy warm, while the center is still melting.
