Goat cheese softens and turns golden on its toast just as the greens are tossed in a vinaigrette made with Granhota’s Honey Vinegar, mellow and sweet, with a gentle, candy-like sourness that recalls a summer walk through the hills.

Serves 4 · 20 min

  1. Heat the oven to 400°F (200°C), place 8 slices of goat cheese log on 8 baguette slices and bake for 6 to 8 minutes, until soft and lightly golden.
  2. Whisk 2 tbsp of the honey vinegar with 5 tbsp olive oil, salt and pepper.
  3. Toss 5 oz (150 g) mixed salad greens with the vinaigrette and divide among 4 plates.
  4. Top each plate with 2 warm goat cheese toasts and a few toasted walnuts or pine nuts.
